COCKTAILS

The sea food or fruit ( one or more kinds fruit) cocktail is served as the first course of a meal at the table. Vegetable or fruit juices are served either at the table or in the living room before the meal. Sea food cocktail usually are served with peppy sauce that has ketchup, chili sauce, french dressing or mayonnaise as a base. 
Fruit cocktails should be tart, trough sometimes made with sweetened fruits. frequently they are sprinkled with rum, kirsch or a liqueur that harmonizes in flavor with the fruit. add seasoning such as worcestershire sauce, tobasco sauce or lemon juice to spark the flavor of vegetable juices.
float a small scoop of fruit-flavored ice or sherbet on small servings of fruits juice. a refreshing shrub. All cocktail should be fresh,colorful and appetizing in appearance and tantalizing in flavor. Thoroughly chill all ingredients and the serving dishes. fruit and seafood cocktail often are kept cold in beds of crushed ice. sea food and fruit cocktails are served in stemmed or footed cocktails glasses while the juice and shrubs are served in small glasses or punch cups. Some juice cocktails are served hot: be sure they are steaming hot and served in cups or glasses that are comfortable for your guests to hold.
