What you should know about meat ? Meat is king of the American dinner table - the food that holds the center spot in the menu and the hub around which most meals are planned. Preferences very from region to region : New England and California love lamb, ham is the favorite in the south in the Midwest pork and beef vie for favor and in the west and southwest beef is tops.
America is almost unique in the world in the abundance of its meat supplies and the manner in which this abundance of its meat supplies and the manner in which this abundance is taken for granted. Historical there are good reasons why this came to be. The first colonist found an amazing, almost untouched supply of wild game in the woods and the fields: and as the pioneers pushed westward, they encountered an inexhaustible abundance on the great western plains. Where fruit, grain and vegetables might be scarce, because the land was not yet cultivated and the supplies the pioneers carried with them were exhausted, there was no end to the meat that was theirs for the shooting. And the high meat diet on which the pioneers fed undoubtedly had much to do with the hardiness, toughness and spirit which settled our country. 
Meat is an excellent source, perhaps the best of the complete proteins from which strong bodies are built, with which they are repaired, and which supply those bodies with heat and energy and help them to resist infections. Protein to perform these function can be obtained from a diet which contains no meat at all, but not so readily and, for most persons, not so palatably. in addition to the high protein content, meat is also rich in the minerals and vitamins which regulate all body functions. add to the presence of all these nutrients in meat, which make it such a fine body building food, the fact that it is extremely palatable and that it has a high satiety value that is, it satisfies not only when it is eaten but for a longer time there after than any other food. All these characteristics add up to good reason why the American diet is built around meat and why the selection an preparation of meat is a vital part of homemaker's job.
